Get ready to pop some corks. The Hollick Estates Sparkling Merlot is a twist on Australia’s unique sparkling red wine category, which tends to be dominated by Shiraz. Utilising this classic grape from its Coonawarra vineyards in a new way has made it evident that Merlot lends itself ideally to wines of this style. Usual Wines’ refreshingly dry North Coast brut sparkling wine is the product of sustainable farming and sulfite-free winemaking, and they go down rather easily, whether on their own or mixed into a Bellini, Rossini, or mimosa. Expect notes of citrus, bergamot, and fresh white flowers on the nose and palate. Hollick is a well established Coonawarra producer crafting quite traditional regional styles from some seriously old vines. A consistent 5 star winery in James Halliday's Wine Companion, Hollick is most famous for it's Cabernet and blends, of which it has several (not least the famous Ravenswood).
